This is our current go-to recipe for bedtime snack. Thanks Diana for posting it on your blog. Here is the original post. She calls it Gnome Granola.

I rewrote the recipe below.
Diana’s Granola
4 cups oats
1/2 cup sesame seeds
1/2 cup sunflower seeds
1 cup coconut
1 tsp salt
2 tsp cinnamon
1 cup walnuts
Put all the dry ingredients in a big bowl.
Melt
1/2 cup oil
1/2 cup honey
And when warm add
1/2 tsp vanilla
Then immediately stir into the dry ingredients. Put on a tray. Bake at 350 for 20 mins. Stir halfway.
I put the dry ingredients in the bowl the night before. I also didn’t put in the coconut this time. Also I prefer pecans and will sometimes substitute them for the walnuts. I also add chia seeds or wheat germ sometime instead of the sesame seeds.

This is definitely a recipe to play with and make it your own.

Do you have an oven or just a stove? I remember in the three years we lived in Europe, we only had an oven in one apartment.
Do you have bedtime snack at your house? If yes, what do you usually eat?
We have a toaster oven and a stove. This is our third apartment, and we just bought the toaster oven a few months ago. It’s good to know that we’re not alone in that respect. π
Nope, we just have supper. You don’t eat supper, wait till morning. Mean, huh? But, to be fair, supper is usually no more than an hour before bedtime.
Oh, wait. We do have bedtime snack. It’s called let’s-try-to-stay-up-later-by-asking-for-water. π (He can drink it lying down in bed, from a sippy cup.)
Hahaha! Hey we have bedtime snack and I want water!! My kids have me trained!
Sounds like they do! Hey, bedtime snack is fine, as long as you ate all your supper! π
